CAPRESE SALAD RECIPE

Ahhhh, this afternoon is going to be extra busy!  We are headed to the State Fair to enjoy a weekend of showing our 4-H pigs one last time. Before all of that can happen, I have to finish packing and the Little Man has football tryouts.  

Maybe it's the tryouts that are making me a little nervous, or the fact that there are a million things to get done before we leave...not sure what it is, but there is so much to do in so little time.

I had to run a few errands "in town" this morning before we head out.  I decided that instead of stopping for a quick, cardiac arrest prompting fast food meal that I would just take my chances and find something in the leftover, overflowing fridge at home.

Much to my surprise, a few favorites that put together, combined for a balanced, tasty lunch...my quick, frugal version of Caprese salad.  All that one needs for a balanced meal for home or on the go - protein, veggies, and lots of flavor!

QUICK CAPRESE SALAD:
1/2 cup your choice 2% cottage cheese
10 grape tomatoes, halved
2 cups fresh spinach
6-8 Fresh Basil leaves, torn
fresh ground pepper to taste
balsamic vinegar to taste
ground red pepper (cheyenne), optional (I like this on days when I need an extra kick)

Plate the spinach over the top of serving dish.  Top with 1/2 cup cottage cheese, basil and halved tomatoes.  Garnish with ground black pepper and balsamic vinegar.  Yum!!
